Our premium heirloom grits and cornmeal begin their journey from our mill to your kitchen by selecting the best seeds by hand at harvest time.  Only the finest ears are chosen based on color, brightness and flint content.  These ears are shelled by hand, winnowed on a clear brisk day and then chilled till spring planting.

Spring planting begins in early April when soil warmth and moisture are optimal.  By early summer, the rich earthy aroma of silking and tassling corn gives promise of a good harvest in the fall.

We allow our corn to ripen and cure naturally on the stalks until it reaches its proper dryness in October.  The ears are then harvested by hand, shucked, and only the best ears are shelled for our heirloom grits and meal.  On a perfect day when the humidity is low and the air is crisp, our premium heirloom grits and meal are ground between giant slow moving granite millstones driven by the time honored waterwheel. Our grits are then packaged and sent on their way to your kitchen for your dining pleasure.
